I have heard that the chain case should contain enough oil to cover the chain, but not more because the clutch could be compromised with oil getting into it. What is the best way to find out how much oil is in the chain case? I have used a wire to measure but don't know what is the proper depth.

Also, the sump slowly fills with oil while sitting--about an ounce or 2 a day. I drain it and pour back into the tank before riding. Does the fact that the sump takes on oil cause the chain case to take on more oil also. Is there a connection between the sump a taking on oil and the chain case doing the same?

If your primary chain case is taking on oil, it is no doubt being pushed through from the engine, especially since you are finding a wet sump condition. The primary case oil level check plug is located on the chain case below the brake pedal and foot peg.

As Johan pointed, oil can seep from the engine cases into the chanincase
Through the main bearings, but in order to do so, at least half of the
Engine cases has to filled with oil. that's most of the oil in the oil tank.

There were many threads on this site regarding wet sump.
The main reasons are dirty or worn non-return valve seats on the oil pump and the timing cover.

A way to avoid wet sumping is to install either an automatic or manual tap
On the oil feed line from the oil tank to the engine,
And the discussions for and against it are as long as the one
Regarding which motor oil to use...
