Waren Zevon's "Boom Boom Mancini" is a great song. His "Hit Somebody (The Hockey Song)" less so. Same, I'm afraid, would in my opinion go for Bob Dylan's "Catfish".
Would Simon and Garfunkel's "Mrs. Robinson", which namedrops Joe DiMaggio, qualify?
"Piazza, New York Catcher" from Belle and Sebastian's DEAR CATASTROPHE WAITRESS. In addition to the very specific reference to Mike Piazza, the great catcher and hitter who was dogged by rumors about his sexuality, the song's full of unusual (and wholly unexpected from this band) sports metaphors.
Stephen Malkmus said that Pavement's "Stop Breathing" has a double meaning, one about the US Civil War and the other about tennis:
"The title is supposed to be being shouted by some challenger who's losing in the US Open. You know, how they start getting upset by the slightest noise? Well, he's telling the crowd to 'stop breathing.' Literally."
Super Furry Animals' "Venus and Serena" is also about tennis (or turtles, whichever).

SFA have another song called Ice Hockey Hair which is one of their all time best songs.
I finally chose the Warren Zevon song that you suggested, susmumrik
Great song !
I've posted it along with Sun Kil Moon's "Duk Koo Kim" about the Korean boxer who tragically died of brain injuries after his fight with Mancini in 1982.
