Can anyone tell me which grease is used for the engine valves please?

Hi Scott...M20 valves are not grease lubricated...They are lubricated by oil mist forced out of the crankcase under pressure as the piston descends. It enters the valve chest through a drilling located in the top face of the crank case between the cam followers...

So, as long as the engines getting oil the valves and guides get it as well and you don't have to do anything!....Ian

make sure there is a hole in your cil bottom gasket to allow the oil to pass (...)
