What is the normal sound of the valves when the engine is running? With my bike you hear the valves working (little knocking sound). I have adjust the valve clearens and they are good now. Is the sound normal?

Yes. Side valves make a lot of valve train noise. Especially if you're not around them often. If your OHV or modern bike's valves were that noisy you would be concerned.
