Hey Patrick,
I think you're probably starting out the same way that most of us did. First, I wouldn't worry about the Ph. I've raised guppies in water ranges of 6.5 to 7.9 and I've never seen a difference either way. Guppies are some of the most adaptable fish on the planet (my opinion) and by adding the Ph down you're probably doing more harm than good. (Sudden Ph swings can be very harmful.) You should be able to start telling the difference at about a month but this will depend on the care of the fish. As you can see it's usually easier to tell the females first as the gravid spot usually developes before the gonopodium.
